Consider any place where contaminants or unsafe conditions may exist to cause health hazards associated with the food being dished up. Design the kitchen to avoid places where food is at the incorrect heat range or in danger for cross‐contamination. Make the loading dock entrance as near to the walk‐in cooler as you can, for example, and design a definite path to other safe‐keeping areas to avoid the meals from coming into connection with anything unnecessarily.
Design a HACCP‐friendly kitchen. HACCP is the industry term for threat research and critical control items. Note all points of potential hazards from the point of acquiring of food on the loading dock, to the chiller and pantry, to the relative series where in fact the food is ready.
